Mixed Seafood Pasta with White Wine Clam Sauce

About the Recipe

Method Monday featuring Mixed Seafood Pasta with White Wine Clam Sauce. One of our longer recipes but bound to be a hit!

The Ingredients

White Wine and Clam Sauce

• 3 tablespoons olive oil

• 1 shallot, chopped

• 6 cloves garlic, chopped

• 1 can minced clams (6.5 ounces)

• 1/2 cup reserved clam juice

           (Note -- reserve and additional 1/2 cup of clam juice for the mixed seafood and linguine)

• ½ cup butter

• 2 tablespoons dry white wine (you'll drink the rest later)

• 1/2 squeezed lemon

• salt and pepper to taste

Mixed Seafood and Linguine

• 1 (16 ounce) package dried linguine

• 4 tbsp butter

• 1 clove garlic, minced

• 12 oz mussels

• 5 oz scallops

• 1/3 cup white wine (almost time to drink the rest)

• 1/2 cup reserved clam juice (see note above)

• 1/2 teaspoon crushed red pepper flakes

• White Wine Clam Sauce (recipe above)

• 1 cup freshly grated parmesan

• 2 tablespoons of chopped flat leaf parsley for garnish

The Method

White Wine and Clam Sauce

Step 1


Warm olive oil in a large skillet over medium heat. Sauté shallots and garlic in heated oil until shallots are tender and translucent, 4 to 5 minutes. Drain cans of minced clams, reserving 1/2 cup of the clam juice.


Step 2


Stir clams, reserved clam juice, butter, wine, salt, and pepper into shallot and garlic mixture. Turn heat to medium-low and simmer until sauce has reduced by 1/2 and has thickened, about 15 to 20 minutes.


Step 3


Turn heat of and squeeze fresh lemon juice in and stir and spoon on top fo Mixed Seafood Linguini, serve immediately.


Mixed Seafood Linguini

Step 1

Make linguine according to box.


Step 2

In a large sauté pan, melt butter over medium heat and add garlic. Sauté for 2 to 3 minutes. Do not burn the garlic.


Step 3


Add in mussels, white wine, clam juice and crushed red pepper flakes. Allow for white wine and clam juice to cook down about 3-4 minutes, until slightly reduced.


Step 4


Add scallops and sauté for and additional 2 to 4 minutes. Cooking time depends on how big your scallops are.


Step 5


Add linguine to the seafood and wine mixture, toss until well mixed. Turn off the heat and let sit for 2 to 4 minutes to allow pasta to soak.


Step 6


Top with White Wine Clam Sauce, sprinkle freshly grated parmesan and flat leaf parsley. Serve immediately.


Notes

1. Drink remaining wine with dinner, you deserve it!
