About the Recipe
This recipe is very easy and versatile with any Sea Bass or mild flavored fish like Tilapia or Grouper. You have a healthy dinner in 30 minutes!
The Ingredients
• 2 tablespoon olive oil or other neutral oil
• 2 eight oz barramundi or other Sea Bass filets
• Salt to taste
• Pepper to taste
• 4 tablespoons butter or ghee
• 3 cloves garlic minced
• half of one lemon juiced, approximately 2 tablespoons
• Zest of one lemon, approximately 1/2 tablespoon
• Green onion for garnish
The Method
Step 1
Pat dry sea bass fillets completely dry with paper towels, then liberally season fillets on all sides with salt and pepper, to taste. Place on a baking sheet. Set aside.
Step 2
Place a saucepan over medium-low heat and add 2 tablespoons of olive oil, 4 tablespoons of butter, 3 minced garlic cloves, lemon juice, lemon zest, and salt to taste in the pan and whisk until completely combined and starts to simmer.
Step 3
Baste garlic butter mixture on both side of the Sea Bass filets.
Step 4
Place the baking tray with the Sea Bass in a cold oven and set temperature to 400ºF and cook for 15 to 20 minutes, depending on how thick filets are.Â
Step 5
When the Sea Bass is done baking, divide fillets between serving plates. Spoon any left over lemon butter sauce over fillets, garnish with chopped green onion (optional), and serve with warm rice or your favorite vegetables.
